Wenn nach dem Start des Fondant-Schlagvorgangs der Rotormotor aufgrund von \u00dcberladung zu stoppen droht, wird die Zuckerzufuhr automatisch gestoppt und die Maschine gesp\u00fclt. Das Sp\u00fclwasser wird \u00fcber ein pneumatisch gesteuertes Ventil in den Abfluss geleitet. Sobald die \u00dcberladung (Amperemeter) behoben ist, wird die Produktion von Fondant automatisch wieder aufgenommen.
